Ingredients: 

To make 1 kg of Biryani Masala, here's the proportional quantity of ingredients in grams:

Whole Spices:

  • Coriander Seeds: 400 g
  • Cumin Seeds: 200 g
  • Fennel Seeds: 150 g
  • Cloves: 10 g
  • Green Cardamom: 50 g
  • Black Cardamom: 30 g
  • Cinnamon Sticks: 50 g
  • Bay Leaves: 20 g
  • Black Peppercorns: 50 g
  • Star Anise: 20 g
  • Mace (Javitri): 15 g
  • Nutmeg: 10 g

Ground Spices:

  • Turmeric Powder: 20 g
  • Red Chili Powder: 40 g
  • Dry Ginger Powder: 20 g

Optional Ingredients for Aroma:

  • Dried Rose Petals: 10 g
  • Stone Flower (Dagad Phool): 10 g

Steps to Prepare 1 kg Biryani Masala

  1. Dry Roast Whole Spices
  • Roast the whole spices (except the ground spices) in small batches over low to medium heat until aromatic.
  • Allow them to cool completely to preserve flavor.

2. Grind in Batches
  • Grind the roasted spices into a fine powder using a heavy-duty grinder in small portions for consistency.

3. Mix with Ground Spices
  • Combine the freshly ground whole spices with turmeric powder, red chili powder, and dry ginger powder.

4.Sieve and Re-Grind 
  • Sieve the masala for a uniform texture. Re-grind any coarse remains to avoid wastage.

Store in Airtight Containers
  • Transfer the masala into airtight containers to preserve freshness, aroma, and flavor.
